Strawberry Kiwi Tea Pops
10 popsicles
3 kiwis, diced
¼ cup + 3 Tbsp simple syrup (or more to taste)
1 cup strawberry puree (approx. 4 oz strawberries)
¼ cup cold brewed Strawberry Kiwi Tea
- In a mixing bow, stir together the strawberry puree and the ¼ cup simple syrup (more or less to taste). Stir in the cold brewed tea, and pour this mixture in the popsicle mold, filling them ¾ of the way full. Place in the freezer for 30 mins to partially freeze.
- Mash up the kiwis and add the 3 Tbsp of simple syrup. Spoon the kiwi on top of the partially frozen popsicle. Leave a little room at the top of the popsicle, as it will expand as it freezes. Place popsicle stick in the middle, and cover. Freeze for at least 8 hours or overnight.
- To remove popsicles, dip each mold in warm water for 10 seconds, and pull out popsicles. To store in the freezer, you can wrap them up with parchment and put them in an airtight container.
