What you'll need:

  • 1 baguette
  • 2 tbsp olive oil
  • 1 clove garlic, crushed
  • 8 oz brie cheese 
  • 1/4 cup Peach & Prosecco Preserves
  • 2-3 tbsp balsamic reduction
  • Fresh rosemary or thyme for garnish

 

How to make: 

  1. Preheat the oven to 375°F (190°C).
  2. With a sharp knife, cut the brie into thin slices. 
  3. Crush the garlic and add it to the olive oil.
  4. Lightly brush each side of the baguette slices with olive oil and place them on a baking sheet.
  5. Place the baguettes under the broiler for 2 minutes, or until they begin to toast. Then flip and toast for another 2 minutes, just until they start to turn golden brown.
  6. Remove the baguettes from the oven and top each piece of bread with a slice of brie, then Peach & Prosecco Preserves
  7. Place the crostini on a serving platter and drizzle with balsamic reduction. Finish with a sprinkle of rosemary or thyme.
