What You'll Need:

  • 4 cups rolled oats

  • 1 cup shredded coconut

  • 1 cup nuts, coarsely chopped

  • 1/2 cup Maple Syrup 

  • 1/3 cup coconut oil or avocado oil

  • 1 tsp vanilla

  • 8 oz dried fruit (apples, dates, apricots, etc.)

  • 1 cup raisins

  • 1/4 cup chia seeds

 

How to Make:

  1. Spread oats on a jelly roll pan. Toast in a 350°F oven for 10 minutes, stirring once.

  2. Stir in coconut and nuts.

  3. Combine honey/ maple syrup, oil, and vanilla. Drizzle over the oat mixture, blending well.

  4. Bake at 325°F for 20-25 minutes, stirring twice, until browned.

  5. Remove from oven and stir in dried fruit, raisins, and chia seeds.

  6. Cool well. Store in a covered jar in a cool place. May be refrigerated or frozen.

Note: A no-stick Teflon cookie sheet makes cleanup easier.
