What you'll Need:
- 12 eggs
- 1/4 cup cottage cheese
- 1 to 2 tsp Roasted Garlic Potato Pizzazz Seasoning
- 1 lb ground chicken or turkey sausage
- 1 to 2 tbsp Maple Syrup
- 1 to 2 tsp Incredible Chicken Seasoning
- 6 English muffins
- 6 cheese slices
How to Make:
-
Preheat your oven to 350°F and grease a 9 x 13 pan.
-
Whisk together the eggs, cottage cheese and Roasted Garlic Potato Pizzazz. Pour into the pan and bake for 12 to 15 minutes, until firm but not overcooked.
-
While the eggs bake, mix the sausage with the maple syrup and Incredible Chicken spice blend. Shape into 6 patties, keeping them on the smaller side and flattening them out so they fit the muffins nicely.
-
Cook the patties in a skillet over medium heat, flipping once or twice, until they reach an internal temperature of 165°F.
-
Cut the eggs into 6 squares, or use a cookie cutter about the size of an English muffin for that perfect fit.
-
Lightly toast the English muffins, then build your sammies: one patty, one egg slice and one cheese slice each.
-
Enjoy right away, or wrap each sammy tightly in parchment paper and pop them into a Ziploc bag. Freeze for up to 2 months.
*To Reheat Unwrap the parchment, wrap the sammy in a damp paper towel and microwave for 60 seconds, flipping halfway through.
