What you'll need:

  • 3 Russet potatoes, scrubbed clean
  • 2 Tbsp (30 ml) Olive Oil
  • 2 Tbsp Potato Pizzazz Roasted Garlic (or your preferred seasoning)
  • 1½ cups (170 g) Shredded Cheddar Cheese
  • 6 slices Bacon, cooked and crumbled
  • Sour Cream, for serving
  • 1 Tbsp (4 g) Chives, thinly sliced

 

How to make: 

  1. Preheat the oven to 400°F (200°C). Slice the potatoes into ½-inch (1.25 cm) thick rounds.
  2.  In a large bowl, toss the potato rounds with olive oil. Season with Potato Pizzazz Roasted Garlic and toss until evenly coated. Arrange in a single layer on a large baking sheet.
  3. Bake for 30 to 40 minutes, flipping the potatoes halfway through, until lightly browned and tender.
  4. Top each potato round with shredded cheddar cheese and crumbled bacon. Broil for 2 minutes, or until the cheese is melted and bubbly.
  5. Garnish with sliced chives and serve with sour cream on the side.
