What You'll Need:

2.5 lb boneless, skinless chicken breasts

2 cups all purpose flour (for homemade Shake 'n Bake)

2 large eggs, scrambled

1 cup bread crumbs

1 tbsp brown sugar
-
1/2 tsp grated fresh ginger

1/4 cup water
-
1 tbsp soy sauce
-
1 tsp apple cider vinegar
-
1/4 tsp salt
-
2 tbsp oil, for searing

Pinch of chili flakes (optional)
How to Make:

Pound chicken to an even thickness (about 3/4 inch). Cut larger breasts in half if very thick, so they cook evenly.

Combine the flour and Incredible Chicken seasoning in a bowl. This is your homemade Shake 'n Bake.

Set up a dredging station with three flat plates or shallow bowls: one with the scrambled eggs, one with the Shake 'n Bake mixture, and one with the bread crumbs.

Dip each piece of chicken in the egg, coat in the Shake 'n Bake mixture, dip back in the egg, then coat well in the bread crumbs.

Heat oil in a skillet over medium high. Sear the coated chicken 2 to 3 minutes per side, until the crust turns golden.

Preheat oven to 400°F. Transfer the seared chicken to a baking sheet and finish baking until nearly cooked through, about 10 minutes.

While the chicken bakes, combine brown sugar, ginger, cranberry apple preserve, water, soy sauce, apple cider vinegar, chili flakes, and salt in a saucepan. Bring to a boil, then simmer until thickened.

Spoon the glaze over each piece. Return to the oven until internal temp reaches 165°F, about 5 more minutes.
Note: use a meat thermometer, boneless breast goes from perfect to dry fast. Adjust salt to taste.
