What you'll need:
- ½ bag tortilla chips (about half a standard bag)
- 1 3/4 cup cooked chicken pieces shredded or chopped (rotisserie chicken works great!)
- 2 cup shredded cheddar cheese
- 1 cup Smoked Hickory & Maple BBQ Sauce
- 4 bacon slices, cooked and chopped
- 1/4 cup red onion, diced
- 3 green onions, sliced
- 2 jalapeños, sliced
How to make:
- Spread tortilla chips (about half a standard bag) in an even layer on a microwave-safe plate or pan. You want good coverage so every chip has a shot at getting loaded.
- Scatter cooked chicken pieces, chopped bacon, red onion, diced, and jalapeño slices evenly over the chips.
- Cover everything with 2 cup shredded cheddar cheese, then drizzle 1 cup BBQ sauce generously over the top.
- Microwave on full power for 1 to 2 minutes depending on your microwave. You're looking for fully melted, bubbly cheese.
- Top with 3 green onions, sliced, grab a chip, and enjoy immediately!
Tip: Sour cream, guacamole, or pico de gallo on the side take these to the next level. If you have an oven handy, 400°F for 8 to 10 minutes gives you crispier chips and even better cheese pulls.
