What You'll Need:
- 2 cups Tea Biscuit Mix
- ½ cup cold butter, grated
- ½ cup cold milk or cream (plus a splash more if needed)
- ½ cup cold clotted cream or heavy cream
- 1 large egg

Haskap Preserves (or any preserve of your choosing)
- Optional add ins: dried fruit, fresh berries, chocolate chips, citrus zest or chopped nuts
How To Make:

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a medium bowl, stir together the Tea Biscuit Mix and cold grated butter. Until mixture looks like cold crumbs

In a small bowl, whisk together the cold clotted cream, milk, and egg. Add to the dry ingredients and stir just until combined — don’t overmix.

Gently fold in any add-ins you like.

Turn the dough onto a lightly floured surface and pat into a 1 inch-thick circle. Cut into 8 wedges (or use a biscuit cutter for rounds).

Place on the baking sheet. Bake for 15-18 minutes, until golden brown. Cool slightly and spread clotted cream and Haskap Preserves before serving.
