What You'll Need:

  • 2 cups Tea Biscuit Mix
  • ½ cup cold butter, grated
  • ½ cup cold milk or cream (plus a splash more if needed)
  • ½ cup cold clotted cream or heavy cream
  • 1 large egg
  • Haskap Preserves (or any preserve of your choosing)
  • Optional add ins: dried fruit, fresh berries, chocolate chips, citrus zest or chopped nuts

How To Make:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. In a medium bowl, stir together the Tea Biscuit Mix and cold grated butter. Until mixture looks like cold crumbs

  3. In a small bowl, whisk together the cold clotted cream, milk, and egg. Add to the dry ingredients and stir just until combined — don’t overmix.

  4. Gently fold in any add-ins you like.

  5. Turn the dough onto a lightly floured surface and pat into a 1 inch-thick circle. Cut into 8 wedges (or use a biscuit cutter for rounds).

  6. Place on the baking sheet. Bake for 15-18  minutes, until golden brown. Cool slightly and spread clotted cream and Haskap Preserves before serving.
